To Life

When one is at a brasserie called A La Mort Subite, drinking the eponymous beer, I ask you, what better food pairing is there than steak tartare? The tartare was wondrously silky and had an even balance of spices that accentuated the richness of the meat. It spread beautifully atop my buttered slice of bread, and paired nicely with the naturally fermented Gueuze beer. It turns out that a meal at a place named "sudden death" is amazingly and ironically restorative. (Just a couple more and I'll stop carrying on about Brussels. I promise.)
